Nordplus project Sustainability: Global Problems and Local Solutions. Students’ conference in Denmark Odsherred, 7-12 April 2024: Sustainable Food Production. Day 5

  Friday the 12th of April   The last day of the conference took place in Copenhagen, where we visited “ØsterGRO”. ØsterGro is the first Rooftop Agriculture project in Denmark. This city farm is 600 square metres and here the citizens can experience the process of food production. The project offers tours, workshops, education and dinners to show the ‘farm to fork’ route of organic vegetables. Østergro is a CSA organization (Community Supported Agriculture) and supplies 40 local families with vegetables during the harvesting season.   Imagine a rooftop filled with soil, vegetables, bees, chickens, rabbits, earthworms and compost-making, harvesting, workshops, community - and a restaurant! The goal and vision of ØsterGro is to make the city greener, to make ecosystems less strange to city people, and to spread local communities centered around food and organic farming.

    Thursday the 11th of April   Thursday, the students dedicated their work to tasks related to the things they had done during the first three days concerning sustainable food production, but also related to the more general issue of ’Global Problems - Local Solutions’.

  Wednesday the 10th of April   The first part of the program was a visit to ”Ingerøens Grøntsager” in Fårevejle. Ingerøens Grøntsager is a small family owned farm. They produce vegetables sustainably and with the methods of regenerative farming.   The students also participated in planting some of Ingerøen’s   new vegetables in the field.   After lunch the students started working on their presentations of their work and experiences during the week. At the end of the day the students went to the local youth house. Here they tried working with clay and had a nice afternoon together.

  Tuesday the 9th of April (day 2)   The day started with a visit to Dansk Tang - Seaweed. The students were given a presentation of the business model of Dansk Tang, the concept of sustainable food production and how seaweed is grown in ‘seaweed fields’ in Isefjorden.   After the visit at Dansk Tang, the students continued to Fårevejle, where Campus Odsherred has its school within food (and carpentry). With chef and teacher Theis Lynge Petersen, the students made a sustainable meal which they enjoyed together.

  Monday the 8th of April (day 1) All the students and teachers met at the school (Odsherreds Gymnasium) for an introduction to the conference. The students’ homework - the creation of a sustainable meal - was presented. The students from the three countries had chosen to make video presentations of their meals, and it was interesting to watch how the students had chosen to present their work. Both seriousness and a sense of humour were part of the presentations. After lunch, we went for a hike on the path of the Unesco Global GeoPark Odsherred. This path took us by historic monuments and great views. One of the places we went by was Esterhøj, one of the landmarks of Odsherred. Via an app, the students could get a sense of how the landscape has evolved since the Ice Age.

Trip to Tallinn Workshop at the Estonian Museum of Natural History Photos https://www.loodusmuuseum.ee/en/front-page On the fifth day, we went to the capital of Estonia, Tallinn. Our workshop venue on this day was the Estonian Museum of Natural History. In the first workshop, we played environmental games about local nature problems and how to solve them. In groups, we had to discuss the ways to solve different environmental problems. For example, if toxic chemicals get into the forest somewhere, what would be the right thing to do? In the course of the workshop, we discussed the most important problems of nature preservation and ways to solve them. The second workshop was about the natural life of the Baltic Sea: which species live in the sea and which sea plants are common there. We also got to know what we can do on a daily basis to make the Baltic Sea more sustainable. In that workshop we got to taste one particular type of seaweed, it was salty but extremely healthy. Some of us we
